June PCOS Recipe: Chicken & Vegetable Stir-Fry

Sorry I have missed a few of these.. I have been busy [almost] getting married!! 🙂

This recipe was DELICIOUS, and so flippin’ easy. Like most meals, it’s not going to be perfect, it’s going to have some sort of flaw. Mine was the sodium… I would highly suggest finding a low sodium sauce if you can. I was in a rush so I just kind of grabbed what I could find. That salt can sneak right up on you!

Per serving there is approximately 340 calories, mostly because of the rice. For those of you doing weight watchers, this meal is 6 smart points.. not bad considering it will fill you right up… Could be the 22 grams of protein!

Chicken and Vegetable Stir-Fry

Delicious, healthy Asian style stir-fry. Easy for a quick last minute dinner idea!

  • 2 tsp minced ginger or to taste
  • 3 tbsp minced garlic or to taste
  • 1 tbsp peanut oil
  • 2 cup snow peas
  • 2 cup shredded carrots
  • 1/2 cup asian stir-fry sauce find low sodium
  • 1/4 cup uncooked scallions chopped
  • 2 cup cooked brown rice
  • 1 lb cooked skinless boneless chicken breast sliced into bite sized pieces
  • 2 tsp sesame seeds


  1. Heat ginger and garlic in oil in a large skillet over medium-high heat until fragrant, 30 seconds;

    Add chicken, snow peas, and carrots. Stir-fry until chicken is cooked through and vegetables are tender, about 3-5 minutes.

    Stir in sauce; heat through. 

    Sprinkle with red pepper flakes. garnish with scallions and sesame seeds.
